Do you know how to pick good cashew nuts?

Nuts are known as the "best in the plant world" with high nutritional value, which coincides with the view that consumers like to "eat something to replenish" in autumn and winter.

Cashew nuts, hazelnuts, walnuts, and almonds are known as the "world's four major nuts", and they have more topics because they resemble kidneys.

How to choose good cashew nuts?

In December 2023, Consumer Reports selected the high-selling BESTORE roasted purple cashew nuts on the market for in-depth evaluation. We sent the cashew nuts to an authoritative third-party testing agency to test the protein, acid value and peroxide value indicators, and also recruited 16 volunteers with rich tasting experience to participate in the tasting, and evaluated the shape, color, smell, taste and texture of the cashew nuts.

The core origin of the selected cashew nut plus

It's bigger than you think

Cashew nuts are native to Brazil and introduced to Asia and Africa in the 16th century. The countries with the largest cashew nut cultivation area in the world include India, Brazil, Vietnam, Mozambique, Tanzania, etc. In China, cashew nuts are mainly found in Hainan and Yunnan.

Among them, Vietnam is one of the world's best cashew nut producers due to its unique natural conditions. Because cashew trees are positive species, and Vietnam has a typical tropical monsoon climate, abundant precipitation and sunshine, compared with cashew nuts in other regions, Vietnam's cashew nuts have fuller grains, more mellow kernels, and lower bad seed rates.

The BESTORE roasted purple cashew nuts in this evaluation are produced in Binh Phuoc Province, the core production area of Vietnam, which has always been known as the "Cashew Capital of Vietnam", and the cashew nuts produced here are firm, crunchy, full, bright and smooth, and have more advantages in quality.

Cashews are graded by size, shape, and saturation according to industry-wide screening criteria, and the number is equal to the number of cashews per pound, so the smaller the number, the larger the particles. The number of 180 type cashew nuts refers to about 180 pieces per pound, and the cashew nuts are 180 type, 240 type, 320 type and 450 type from high to low, and BESTORE fragrant roasted purple cashew nuts belong to 180 type.

In order to visually compare the differences between different grades of cashew nuts, this journal purchased 240 and 320 cashew nuts from the market and compared them with the evaluation products.

The results showed that the three types of cashew nuts were all "crescent-shaped", and in terms of "body shape", BESTORE fragrant roasted purple cashew nuts completely crushed the 240 and 320 types, and the shape was more uniform, more complete and fuller.

From the perspective of nutritional value, cashew nuts are still the "top nuts" in nuts, containing twice as much protein as general cereal crops, and the types of amino acids are complementary to the types of amino acids in grains.

According to the "Chinese Food Composition Table 6th Edition, Volume 2" edited by Yang Yuexin, the protein content of pure milk (whole fat) is 33g/100g。The test results showed that the measured value of BESTORE fragrant roasted purple cashew nut protein was 201g 100g, which is 6 times the protein content of pure milk, is a "high-protein" nut.

Only seasonal fruit is picked

The freshness is much higher than the national standard

Cashew nuts produced in high-quality origins are born with a "fairy halo". BESTORE fragrant roasted purple cashew nuts carefully select A180 type branch fruits, which have been screened layer by layer through 5 processes, and each one is full and round. Freshly picked cashews are sent to the production workshop for processing, so that the cashews that ripen naturally will not miss the best state of the kernels.

Because about 80% of the fat of cashew nuts is unsaturated fatty acids, as a kind of "good fat" that can reduce the level of LDL in the blood, it is also very easy to oxidize and deteriorate, resulting in a typical "hala taste" and "rejuvenated taste", which not only deteriorates the taste, but also greatly reduces the nutritional value.

The freshness of cashew nuts was evaluated, and the peroxide value and acid value indexes were evaluated.

Peroxide value is an indicator of the degree of oxidation of oils and fatty acids, and is used to indicate whether food has oxidized and deteriorated. Acid value refers to the amount of free fatty acids in an oil. Generally speaking, the lower the peroxide value and the lower the acid value of cashew nuts, the higher the freshness and better quality of the oil.

According to the provisions of the National Food Safety Standard for Nuts and Seeds (GB 19300-2014), the peroxide value (in terms of fat) in cooked other nuts and seeds should be 05g 100g, acid value (in terms of fat) should be 3mg g.

The test results showed that the measured peroxide value of BESTORE fragrant roasted purple cashew nuts was 0082g 100g, the measured value of acid value is 078mg g, far below the national standard limit, the freshness is very high, indicating that the cashew nuts in the jar have always maintained a "fresh" state.

Zero additives are healthier, and subjective tastings get high scores

The advantages of a "good" cashew nut do not stop at size, nutrition and freshness, and most importantly, it can capture the hearts of the tasters.

The journal recruited 16 volunteers with rich tasting experience to participate in the tasting, and evaluated the cashew nuts from multiple dimensions such as appearance, color, smell, taste, and taste.

The subjective tasting results showed that the overall satisfaction of the volunteers with the roasted purple cashew nuts in BESTORE was relatively high, and the appearance and taste were particularly eye-catching, with a score of 89 points and 90 points, color, smell, taste is not less than 82 points.

Cashew nuts from the ** production area are destined to be a "conspicuous bag".

The cashew nuts of the A180 model are not in vain, and under the high visualization of the transparent jar, "big" is the unanimous evaluation of almost all tasters, and they invariably mention "very uniform size", "uniform cashew nut plus", "plump", "so big", "very big", etc.

Like the "freshness" presented by the test data, the cashew nut smells fresh and has no peculiar smell, and the taste is very crispy, with some tasters commenting that "when you open the lid, you can smell the obvious nutty aroma, it tastes very fresh, and it does not stick to your teeth", "it smells like a natural nut aroma", "the kernel is very crispy, and the more you chew it, the more fragrant it is", "it has the natural fruity aroma of cashew nuts, and it is very fresh", "it looks and smells fresh, it is full of nutty aroma, it tastes super crispy, and the unique oil aroma of nuts is great", etc.

There are many flavors of cashew nuts on the market, such as charcoal-roasted, salt-baked, creamy, honey-flavored, durian-flavored, etc., and the original cashew nut has higher requirements for quality, because it cannot use external seasoning to hide the defects in quality, such as smell and color.

Cashew nuts without any seasoning are confident in quality.

The ingredient of BESTORE fragrant roasted purple cashew nuts is only "cashew nuts", and even a little salt is not needed for polishing, which really belongs to "0 additives". According to reports, the cashew nuts are roasted and fried without salt, and the high and low temperature gradual baking process is adopted. There are no bells and whistles in seasoning, and the high-quality original cashew nuts have received a lot of praise, and the tasters commented that "there is no 'technology and hard work'", "natural sweetness", "no messy seasoning, very suitable for health people", "no additives to eat and no burden, it feels very healthy", etc.

It is worth mentioning that the "purple coat" on the surface of the purple cashew nut is also edible, mainly dietary fiber, but it is still recommended to peel it off when eating, otherwise it may be slightly bitter and affect the taste.
