Jade Chicken Hibiscus: Fresh chicken breast is selected, supplemented by egg white, and made into a spherical shape. Pour in the best clear chicken broth, color it with seasonal spinach in winter, and finish with Kaluga 9-year-old sturgeon caviar on top of it to create a delicate balance and depth of umami. The caviar is bright and crystalline, and the chicken hibiscus is white in color, like black and white pearls falling in the green Xianghu Lake.
