Steps:1Put the brown sugar in the hot water and stir well to melt the brown sugar. Wait until it is not hot, about 35 degrees.
2.Add the yeast to the brown sugar water, stir well and let it sit for a few minutes to melt. Yeast that is resistant to high sugar can be used, and regular yeast can be used if it is not available.
3.Add the flour and stir well until a flocculent shape is formed.
4.Knead well to form a smooth dough, you can add about 30 grams of water as needed during the kneading process (due to different brands of flour with different water absorption). Cover the dough with plastic wrap or wet gauze and let it rise in a warm place until the dough is twice as large, about 1 to 15 hours.
5.Wash the dates and remove the pits, cut them into small pieces for later use.
6.Fermentation is complete when the dough has risen to twice its size and is filled with honeycomb-shaped holes.
7.Sprinkle some flour on the cutting board and flatten the dough on top. Sprinkle with red dates (set aside a few red dates and don't put them all in). Note that the leavened dough will be slightly sticky, and if it is too sticky when kneading, you can add some flour in moderation.
8.Knead the dough repeatedly to expel the gas.
9.Divide the dough into three equal portions and knead them into circles.
10.Roll each dough into long strips.
11.Stack two of the three noodles on top of each other and place the middle one on top to make it a triangle.
12.Gently elongate and knead the triangular dough, but don't knead too hard so that the three noodles don't stick too tightly and affect the flowering effect.
13.Divide the dough into small doses of about 70 grams per portion, without shaping, section side up.
14.Garnish with a sprinkle of red dates on the surface, then cover with damp gauze and let it sit for another 10 to 20 minutes (10 minutes in summer and 20 minutes in winter). In order to maintain the flowering effect, the second fermentation time should not be too long.
15.Add water to the pot and bring to a boil (the water must be boiled first), then put the steamed bun embryo into the steamer, steam on high heat for about 15 minutes, and then turn off the heat.
16.Turn off the heat and wait for another 3 minutes, then remove the steamed buns.
Tips:1Make sure the brown sugar water is not hot before adding the yeast, otherwise the yeast may be scalded to death.
2.Due to the difference in water absorption of different brands of flour, you may need to add a small amount of flour or water in an appropriate amount, please adjust it according to the actual situation.
