Ice wine is a traditional Chinese drink made from ingredients such as glutinous rice, koji, and sweet wine medicine. It has a rich aroma and sweet taste, making it an ideal drink to beat the heat in summer. Here's how to make ice wine.
Ingredients: glutinous rice: 500 grams.
Koji: 2 grams.
Sweet wine medicine: 10 grams.
Water: To taste.
Quilt: 1 pc.
Plastic film: 1 pc.
Steps: Prepare the ingredients: Wash the glutinous rice and soak it for 24 hours until the rice grains become very swollen. Then filter out the water, place the glutinous rice on a clean plate, and use chopsticks to insert a hole in the middle of each rice grain.
To make sake: Mix the koji and sweet wine medicine together, add an appropriate amount of water, and stir well. Pour the mixture into a clean bowl, place the glutinous rice in the bowl and pour the mixture over the glutinous rice.
Fermentation: The bowl is sealed with plastic wrap and then wrapped in a quilt. Place the bowl in a warm place, keep the temperature at around 30 degrees, and let it ferment for 36 hours.
Filtration: After fermentation is complete, the glutinous rice and sake are strained out and the sake brew is poured into a clean bottle.
Storage: Keep the cap tightly closed and store the bottle in a cool place. Icewine can be kept at room temperature for months or even years.
