The fifteenth day of the first lunar month, as the first full moon night of the year, is the "beginning of one yuan", the night of the earth's rejuvenation, important and grand. What do you mean by four dishes?
First, steamed fish
On the fifteenth day of the first month, there will be a reunion family banquet, and there will be fish. The homonym of fish "Yu" means that there is more than every year, and the practice of steaming means that it is thriving.
Steamed fish method:
The ingredients to be prepared are 1 piece of fresh sea bass.
1. Remove the scales and gulls of the sea bass, then remove the backbone, wash off the blood, put cooking wine, and ginger shreds inside and out, marinate for a few minutes to remove the fish. Prepare some more shredded green onions and ginger.
2. Put shredded ginger at the bottom of the fish plate, and then stack the fish in a lying shape. Steam in a pot with boiling water for 7 minutes, turn off the heat and simmer for 3 minutes.
Take out the fish tray and control the steaming juice inside. Drizzle with steamed fish soy sauce, stack the fish body with green onion and ginger shreds, burn some hot oil and pour it on to bring out the fragrance, and it can be served.
Second, braised pork
The fifteenth day of the first lunar month is a festive day, and hard dishes should appear at the family banquet to show the importance of the Lantern Festival. Braised pork, ruddy in color, fat but not greasy, meaning prosperous.
How to make braised pork:
The ingredients that need to be prepared are pork belly with skin, rock sugar, green onion and ginger, and star anise.
1. Cut the pork belly into small pieces, pot under cold water, bring to a boil over high heat, add cooking wine to remove the smell, and skim off the foam halfway. Rinse after removal, then rinse and drain the water clean.
2. Add vegetable oil to the stir-fry pot, add 1 handful of rock sugar and stir-fry until completely melted, the color gradually darkens, dense bubbles continue to bulge, pour in the meat pieces and stir-fry until colored.
3. Pour in the boiling water that has not passed the ingredients, add cooking wine, light soy sauce, green onion and ginger, star anise, sweet noodle sauce, fermented bean curd, salt, cinnamon, thirteen spices, boil and simmer for 10 minutes on high heat, the purpose is to volatilize off part of the fishy smell, and then cover the lid and simmer for about 50 minutes.
4. At this time, the vegetable juice has been bright and the color is ruddy, so you can turn off the heat and remove from the pot.
Three, steamed chicken
The Lantern Festival family banquet is more perfect with chickens. The chicken is steamed, which means auspicious and prosperous, and life is thriving, and it is getting better and better every year.
Preparation of steamed chicken:
Ingredients to prepare: chicken thighs, spiced steamed pork and rice noodles.
1. Chop the chicken thighs into pieces, soak them in the blood water, wash them and take them out to control the water. Then add soy sauce, ginger, white pepper, matsutake powder (or chicken powder), salt, mix well and marinate for 10 minutes.
2. Stir in the steamed pork rice noodles so that each piece of meat can stick to the rice noodles.
3. Put the chicken pieces into a large bowl, do not press or press, and steam in a pot with boiling water for half an hour. Snap onto a plate and serve.
Fourth, preserved eggs mixed with tofu
The Lantern Festival is the "final play" of the Spring Festival, and there must be tofu on the family banquet table. Tofu homonym "to Fu", the meaning of blessing to home. In addition, this time the preserved eggs are added for modeling, which also has a beautiful implication of rich flowers.
Preparation of preserved egg tofu:
The ingredients that need to be prepared are 1 box of inner fat tofu and preserved eggs.
