Tofu skin is a kind of traditional food spread in Yueyang Lou District on the shore of Dongting Lake, which is an important part of Yueyang's traditional cuisine and a traditional snack with great characteristics of Yueyang folk.
According to historical records, more than 2,000 years ago, the birthplace of Hunan and Chu civilization was in the Spring and Autumn Period and the Warring States Period, during the Qin-Chu War, a large number of displaced people and refugees migrated around in order to escape the war, and the rice was kneaded into a ball in order to facilitate the carrying of food, which formed the predecessor of the bean skin.
Different from other areas of the bean skin, Yueyang's Erliang fragrant bean skin is made of mung beans from the Dongting Lake area and the best early rice, mixed in a ratio of 2:1, soaked for 9 hours and then beaten into a pulp.
