Specialty solitaire, Dong'an chicken applied to play.

In Yongzhou, Hunan, there is a traditional dish with a long history, which was served at the state banquet, but it has been kept "low-key" in the local half-acre pond. This is the Dong'an chicken that originated in the area of Luhong Town, Dong'an County, Yongzhou City.

Dong'an chicken has a history of more than 1,700 years, and its name has undergone several periods of evolution. In the Western Jin Dynasty, it was called "Aged Vinegar Chicken", at that time, a chef mistakenly put the aged vinegar into the chicken for seasoning as cooking wine, but was praised by the county order for its strange taste, and since then, the practice of "Aged Vinegar Chicken" has spread among the people.

At the end of the Qing Dynasty, Zeng Guofan, Zuo Zongtang, Liu Kun and other guests went to the house of Xi Baotian, the general of the Hunan Army. When asked about the name of the dish, Xi Baotian wanted to say "Chen vinegar chicken", but he thought that the name was too earthy, and he couldn't say it clearly. Zeng Guofan said: "This is a specialty of the Xi Guanbao family, so it's called 'Guanbao Chicken'!" ”

* During the period, Tang Shengzhi, a general of the National Revolutionary Army, held a banquet in Nanjing, and this dish was also well received. When asked about the name of the dish, Tang Shengzhi was about to speak, but Gu Boxu, who was beside him, reminded: "Hometown flavor hometown cuisine." Tang Shengzhi immediately said: "This is our special dish in Dong'an, called 'Dong'an Chicken'." ”

In February 1972, during the visit of the United States to China, a banquet was held, and the dish of Dong'an chicken was also included during the banquet. Nixon praised while eating, and after returning to China, he praised the excellent taste of Dong'an chicken. Later, Dong'an chicken was listed as a state banquet dish and the first of the eight Hunan dishes.

Compared to other chicken dishes, how is Dong'an chicken different? In terms of practice, cooking a Dong'an chicken is different from other dishes to retain and stimulate the fresh aroma of the chicken itself, but it is necessary to prepare fresh red pepper, chili powder, ginger, Sichuan pepper, salt, monosodium glutamate, cooking wine, vinegar and sesame oil and other ingredients. Dong'an chicken is red, white, green and yellow, in terms of taste, the chicken is tender and crispy, sour, spicy and fragrant, fragrant, sweet, sour, spicy, tender, crispy and crispy.

Although there is no need to use any precious and scarce ingredients to make a Dong'an chicken, it is very strict about the origin of the ingredients, and the local hens and locally produced white vinegar must be used in Dong'an County. Therefore, it is difficult to reproduce Dong'an chicken in other places.
