When I make my own dumplings, I like to match the meat and vegetables with the dumpling filling, so that it will not be as greasy as the pure meat filling. My dumpling filling method:In a bowl, add diced meat and chopped cabbage (can also be substituted for other vegetables, such as: leeks, camellia, celery, corn, water chestnuts, etc.), add chopped green onions, ginger foam, five-spice powder, pepper, light soy sauce, a little dark soy sauce, salt, cooking wine, a few tablespoons of heated cooking oil, and stir well.

The purpose of adding cooking oil is to reduce and inhibit the water analysis in cabbage, and it can also make the meat filling more sticky.

But when I went home and watched my mom and other relatives mix the dumpling filling, I found that although the ingredients were similar, the proportions were very different!

For example: ginger foam. I usually only add a little bit, about the amount of a finger, but my mom would put a whole slap in the face! Although the number of dumplings made at home is indeed more than ten times that of eating by myself, there are too many ......Ginger is just a seasoning!

Vegetable. I usually add less than meat, but my mom definitely doesn't add less than meat!

Green onion. I usually only cut a few shallots to taste, but my mother cut a lot of them, and I guess it must be about a pound......

Anyway, in the end, when the dumplings of relatives at home are cooked, they can taste a little meaty ......

But it's understandable. First, there are many people in the family, and every time you make dumplings, you have to prepare a few catties of diced meat; Second, the elders are all soaked in hard days, and they are used to saving.
