Taking advantage of a few days of rest during the Spring Festival holiday, he purchased a new batch of beans, and on the seventh day of the Lunar New Year, the production workshop began to be busy in the new year.

In winter, the production workshop of teasing soy products is steaming. The Yangtze River reporter put on protective clothing, entered the workshop after disinfection, and was greeted by a strong bean fragrance. In the workshop, the soybeans that have been soaked in stainless steel barrels for 10 hours are ground by the machine to produce pulp, and the pulp is then poured into the tank and heated and boiled to 100 after being collected, and then gypsum is added to the slurry after cooling, and finally made into tofu or dried tofu. On the automatic conveyor belt, the white dried tofu that has been cut into cubes is waiting for the marinade to be seasoned.

In the past, the foam was suppressed by using an appropriate defoamer, but now it is heated in a stuffy tank by boiling the pulp under micropressure, because the pressure is constant and the heat is uniform, the foam will be reduced. "I have been making tofu for more than ten years, and I am already familiar with the steps, but Kong Wei hopes to make the production of soy products more and more standardized and automated.

In 2007, Kong Wei, who graduated from high school, took over his parents' tofu stand. Like many stalls in the wet market, Kong Wei has to get up at 3 a.m. every day to prepare the tofu that has been refined, boiled and pulped the day before, and by 5 a.m., the freshly made tofu is loaded onto the car and sent to the market for fresh sale.

The life of a family of three depends on this tofu stall, but Kong Wei is not satisfied with just running a tofu stall. "Everyone is a small stall in the vegetable market, doing a neighborhood business, what is the difference between me and others? Kong Wei said that through market research, he found that in the field of soy products, which is generally operated in the form of husband and wife stalls, there are not many merchants who can provide large quantities of products, so he decided to start with a small workshop, buy equipment little by little, and expand the scale.

The newly built factory was small in scale and not well-known. Kong Wei still remembers signing his first major client. It was a college cafeteria, and he found the person in charge of the logistics department by chatting with the master at the canteen stall, who was very busy and waited outside the door for several hours. After meeting, the other party asked Kong Wei what advantages the tofu produced was, and Kong Wei bluntly said how many soy products the canteen needed to consume a day, and he would supply them for free and try them at home.

After the tasting, Kong Wei invited the other party to his own production plant to visit the large-scale and standardized production process of soy products. After that, Kong Wei's soy products gradually accumulated word of mouth, Kong Wei said, and later the person in charge of the school canteen took the initiative to contact him, hoping to cooperate, ** soy products.

In 2020, Kong Wei decided to expand the production scale of the factory, which was located in a food industrial park on Zoumaling Street. Not only because of the concentration of food companies here, but also because the thermal pipelines in the industrial park are connected to the pipeline steam from the Hanchuan Power Plant, so that the production of soy products can get rid of coal and use green and clean energy.

After making tofu for more than ten years, Kong Wei summed up the differences between the different tastes of the north and the south. Northerners like old tofu, so they use brine to reduce the moisture in the tofu; Southerners prefer tender tofu, so they use gypsum to make the tofu have better water retention. He himself loves to eat tofu, and named the company Ai Tease after his son, who also likes to eat tofu, with the nickname "Tease".

Today, Aifu bean products produce about 30,000 catties of various products every day, Kong Wei said that in the new year, he will continue to expand the production capacity of soy products, and open a direct store in the urban area.
