Ingredients Required:
6 egg yolks.
3 4 cups sugar.
1 shot espresso, cooled.

Steps:
Prepare the coffee mixture:Once the espresso has cooled, add the coffee wine and stir well. This will become the liquid in which the wafer is soaked.
Whisk the egg yolks and sugar:In a large bowl, whisk the egg yolks and sugar with a blender until light yellow and lighter texture.
Add Cheese:Add the mascarpone cheese to the egg yolk sugar paste and continue to stir until a homogeneous mixture is obtained.
