In 2024, I would like to say, I finally learned to fry chicken wings. It's always a hard nut for me, and I salivate every time I see someone make a golden, crispy, fragrant fried chicken wing. So, I decided to challenge myself in 2024 to learn this delicious fried chicken wing.

First of all, I looked for a lot of recipes and researched various methods, from ingredient selection, pickling, breading to frying, every step is crucial. I chose fresh chicken wings and marinated them overnight with a variety of spices to allow the chicken to fully absorb the flavor of the seasoning. Next, I made fried flour, mixed it with eggs, flour and starch in proportion, and tried many times to find the perfect ratio.

Breading is a crucial step. I gently patted the chicken wings so that they were evenly coated with frying powder and put them in the hot oil one by one. Controlling the oil temperature is also a science, too high will fry the scorch, too low will not be crispy enough. I carefully observed the changes in the oil temperature and adjusted the heat in time.

As the wings gradually turned golden and enticing, I smelled the familiar aroma. I can't wait to pick up a piece and taste it, the skin is crispy and the meat is tender and juicy. At that moment, I felt that all my hard work had paid off.
