The winter solstice is not only a solar term, but also a very important traditional festival among the people. On this day, people will make sacrifices, set off firecrackers, carry lanterns, etc. In terms of diet, bacon, glutinous rice, dumplings, glutinous rice balls, etc., will be eaten to pray for the blessing of the family and have a good fortune.
Tangerines and bananas are two inexpensive ingredients that can be bought everywhere. They also have a lot of nutrients, so why should they eat less after the winter solstice?Because oranges and bananas are cold in the first place, people with a bad stomach are prone to abdominal pain and diarrhea when they eat them. In addition, eating too many oranges is easy to catch fire, and bananas are picked before they are ripe because they have to be transported long distances, and the taste in winter is very bad, and eating too much can easily lead to constipation and other problems.
(1) Stuffed tofu (fortune to the home).
Tofu has the meaning of "rich capital" in the folk, and the winter solstice is a day when the whole family gathers together, and eating some tofu is also auspicious. Tofu is affordable, rich in protein, minerals, etc., and can be steamed, fried, fried, stewed, etc.
Take out 500 grams of old tofu, cut it into thick slices and soak it in lightly salted water for 30 minutes. Dig a hole in the middle of the tofu, be careful not to hollow it out, and place it on a plate.
Wash the tenderloin and chop it into minced meat. Add light soy sauce, green onion and ginger water, sweet potato starch and stir clockwise. Add salt to taste, add some oil and stir well.
Stuff the seasoned minced meat into the tofu and gently press it flat. Brush the pan with oil and fry the tofu. Just wait until the tofu is browned on both sides.
Take 1 bowl, add 1 tablespoon of light soy sauce, salt, starch and water, stir well, pour into tofu, and cook over low heat. Sprinkle some chopped green onions, and the juice will be reduced over high heat.
(2) Ground pot chicken (good luck).
Chicken has the meaning of "good luck", and this season is also the time when the meat is the fattest. It has a high protein content, and it is not easy to gain weight if you eat it often. There is also a saying in the folk that "every nine chickens, a good body a year", the temperature is low during the winter solstice, how can you get less chicken?
Take a chicken and chop it into small pieces. Add water over the chicken pieces and add 1 tablespoon of flour. Scrub the chicken pieces and drain.
Heat oil in a pan and stir-fry the chicken pieces. Wait for the moisture on the surface of the chicken pieces to dry, add dark soy sauce, light soy sauce and dark vinegar to remove the smell. Stir-fry for a while, simmer for 3 minutes, add some ginger and garlic to remove the smell, and stir-fry a few times.
Drain the water over the chicken pieces and cook over high heat. After the water is boiled, add a pinch of salt and reduce the heat to a low boil.
Take out 200 grams of flour and add a little salt to increase the gluten of the flour. Pour warm water in small quantities several times, knead into a smooth dough and let rise for 1 hour. Divide the dough into small pieces of the same size and roll out the tongue.
When the chicken can be inserted with chopsticks, add salt to taste. Stick the raw cake embryo on the side of the pot and continue to cook over low heat.
When the cake is cooked, add the chili pepper, stir-fry and cook evenly for 2 minutes.
(3) Stir-fried bean sprouts with shredded pork (auspicious).
Bean sprouts have always had the meaning of "auspicious wishes", which is a low-calorie, low-** ingredient that everyone can afford.
Remove 300 grams of mung bean sprouts and soak them in water. Wash a few times to remove any excess mung bean shells.
Remove 100 grams of tenderloin, wash it and cut it into shreds. Add some light soy sauce, dark soy sauce, sweet potato starch and stir well, then add some cooking oil and stir clockwise for a while.
Heat oil in a pan and sauté with chili pepper and garlic until fragrant. Stir-fry the shredded meat until the shredded meat changes color. Add the bean sprouts and stir-fry over high heat.
When the color of the bean sprouts is fried to a transparent state, add salt to taste, sprinkle a little water starch, stir-fry a few times and then get out of the pot.
(4) Leek dumplings (ingots).
Cut off the stems of the leeks and soak them in water. Scrub well, drain and chop into minced pieces.
Remove the skin of the front leg meat, wash it and cut it into small pieces, then chop it into minced meat. Add light soy sauce, sweet potato starch, and cooking oil and stir for a while to make the pork tender and chewy.
Put the pork in the leeks, add a little salt and cooking oil and stir again for a while. Put the chive meat filling into the dumpling wrapper and knead it firmly.
Boil water in a pot and add a little salt when small bubbles bubble around to prevent the dumpling wrappers from breaking. Add the dumplings to boil, bring to a boil, then add 1 tablespoon of cold water to boil. Add cold water 3 times and the dumplings will be cooked through.
