One. My father drank tea, brewed in a small clay pot, and drank it to the spout, and when I was young, I took a rice bowl and took half a bowl, and drank with him, and gradually fell in love with tea.
Most of the tea was ordinary jasmine and incense tablets that my father bought back from the commissary, and the tea was not expensive at that time, and the packaging of two taels was only a few cents a piece. Jasmine slices of this kind of tea, there is a floral fragrance but more bitter, once in a classmate to drink a kind of green tea, the tea shows a fine white hair, fragrant and not very astringent, and a little sweet, after returning home and talk to my father about this tea, my father said that this is Lingyun Baihao tea, slightly more expensive than jasmine and fragrant pieces. In the future, he only put this tea in his small clay pot.
I always drink green tea, my stomach is hungry fast, and over time, my stomach is still a little uncomfortable, and I later learned that it was a cold stomach. The doctor said that people with stomach cold should drink some fermented tea.
The so-called fermented tea refers to the tea made by the fermentation process, such as black tea, white tea, Pu'er, etc., this kind of tea, easy to store, the longer the transformation of the better, the older the tea, the more mellow and fragrant. So which of these kinds of tea is good to drink? At that time, the trend of drinking Pu'er tea was in the ascendant, so I tried to drink a little. At this time, I was no longer a child.
Pu'er tea, mostly made of old leaves and old stems, three-point leaves and seven-point stems, fermented by Wudui, pressed into tea cakes. In this way, it is convenient for horses to transport - in the past, Pu'er tea, most of which was in the **Northwest Frontier Minority Areas, loose tea was not easy to transport, and it was pressed into tea cakes, which was more convenient to pack.
At first glance, Pu'er tea is slightly black, unlike some teas, which are green or reddish, but the leaves are thick and distinct. Mainlanders began to drink this tea, probably influenced by a book about the ancient tea horse road or a TV program, and then drinking Pu'er tea gradually became a trend, and even gradually became fashionable, many people went to buy or collect Pu'er tea, once unknown frontier tea, suddenly became the fragrance of tea drinkers in the mainland. - I drink Pu'er tea, naturally, not to follow the trend, but in the process of finding a tea suitable for my own drinking, I have been screened and decided.
Fujian Tieguanyin and Guangdong single fir have a special fragrance, sweet aftertaste, and are refreshing to drink. Good Tieguanyin ** is not cheap, the strange thing is that sometimes I feel good when I try tea in the tea shop, and the taste changes after I buy it back. Later, with the name of "original direct sales", it became more and more difficult to identify, and I was even more apprehensive about this "original direct sales", and I was very uneasy, because there was a trip, the tour guide "led" us to buy the "original direct sales" purple clay pot, and the sky was blown along the way, and after arriving at the "direct sales" store, I was accompanied by people, and I did not buy or withdraw, and everyone bought it. I "so ambitious", bought a 750 yuan, according to them said that the Queen of England is the most favorite, dark yellow color of the purple clay pot, after returning home in a hurry to enjoy the queen's treatment, I didn't expect just warm the pot, the bottom of the pot fell down with a "snap", only to know that the black-hearted tour guide took the black-hearted shop to be black-hearted by the black-hearted man. You must know that 750 yuan in that era is not a small amount, and in order to ensure the quality, I bought a purple clay pot in the largest department store in the capital that will not fall off the bottom and cost much less than the mud pot that the queen of "original direct sales" loves. Since then, I have never dared to patronize the "original direct sales" store. Let's drink Cantonese single fir, it's not easy to find here.
Then drink fully fermented black tea. The black tea is fragrant! The black tea, the strong fragrance, makes people feel like meeting a lady who has sprayed too much perfume, the fragrance is a little touchy, and I am not very used to it.
When I first drank Pu'er tea, I was not very used to it, and I felt that its fragrance was not obvious. Pu'er tea (ripe tea) tea soup is deep red and thorough, and the taste is not as ostentatious as other teas, but when you drink it, its mellowness, its mildness, and its sweetness will slowly manifest itself, and people can't help but imagine how this ancient tree tea growing in the deep mountains of Yunnan blooms its inner beauty to people. In addition to Pu'er tea, I also like black tea and white tea.
Two. There are many places in Guangzhou, and drinking tea is also called sighing tea. Of course, sighing tea is not just as simple as drinking a few sips of tea, such as morning tea, evening tea, do not drink for most of the day, how to call sigh tea - the original meaning of the word "sigh", there is the meaning of chatting, such as chatting, they are called "sighing" the world - life is short, many ups and downs, many people are sophisticated, need to have a place to vent, need to find someone to talk to, usually have no place to go, after drinking, a few confidants and friends get together, at home and at work inconvenient words, in the sigh tea "sigh" out. The word "sigh" expresses many joys and sorrows, many clutches, many vicissitudes, and many experiences, and it is comfortable to "sigh" completely.
Tea lovers, most of them will raise one or two clay pots, old tea customers are more fond of using China's famous clay pots to make tea, such as Yixing purple clay pot, Jianshui clay pot, Xiaoxing clay pot, Chaozhou cinnabar pot, etc., the so-called gongfu tea, is to use the clay pot to brew fermented tea, put more tea, brewed tea soup concentration is high this kind of brewing method of the name. ——After a period of brewing, the surface of the teapot will appear matte, and it will form a pulp after a long time, and the color changes greatly. This is the effect of raising a pot, and it is also the fun of raising a pot.
Several famous pottery in China are said to have good air permeability, making tea without losing the original flavor, and overnight tea is not rancid. Based on my superficial understanding of them, the characteristics of the purple clay pot are sand, while the Jianshui pottery pot and the Xiaoxing pottery pot are mainly made of mud, so it seems that the structure of the purple clay pot should be more loose and breathable. On this point, the ancients have long had experience, and there is such a record in the relevant information, "Yixing teapot, made of coarse sand, is taking sand without earthy ears", "The teapot is made of sand, and the cover is neither fragrant nor cooked, so it is used to make tea without losing the original taste, and the color, fragrance and taste are all contained." "I found in use that when the purple clay pot is filled with water in the warm pot, I can hear the inner wall of the pot with the sound of "zizizi" water absorption, which shows its good air permeability. The purple clay pot is more suitable for brewing old and hard tea, while the Jianshui pottery pot and the Xiaoxing pottery pot are suitable for making relatively tender tea. Chaozhou cinnabar pot is a tea set necessary for Chaozhou people to make kung fu tea, it is made of a unique local cinnabar mud made by a local special pot craftsman, in the past it was used by the locals more, not very well known to outsiders, now more and more people know it, its sand-based material and restrained redness, but also more and more like.
There is a set of relatively fixed procedures for drinking tea and raising pots: warming the pot, throwing tea, washing tea, pouring water, and making tea soup. After drinking, wash the pot and wipe the pot, and put the pot in a clean and breathable place to dry. This process is a test of people's patience and is also a process of cultivating people's minds.
I drink tea every day, and insiders sometimes participate in it, with insiders participating, firewood, rice, oil, salt, sauce, vinegar tea, endlessly, but still lively, it can be regarded as "sighing" tea. Sometimes I go to the teahouse with a few friends, and I sit for most of the day, which is the real sigh of tea.
Three. When drinking tea outside, I often hear people talk about the tea ceremony, and when I hear people say, I don't seem to be able to hear anything, sometimes "I still understand if you don't say it, but the more you say it, the more confused I become." "Dao" This thing is really bad.
It is said that the Japanese tea ceremony is the most elaborate, and the Chinese tea ceremony is authentic. Whether it is the Japanese tea ceremony or the authentic Chinese tea ceremony, I don't know much about it, but I have seen the so-called tea ceremony of the people, and it is difficult to say that it is authentic or not.
I saw it from a senior friend: there is a set of tea sets on the tea tray, a pot of four cups, the pot is a purple clay pot, the cup is a small white porcelain cup, in addition to the small porcelain cup, there are several slender small cups, brew tea, pour to the slender small cup, and then flip the small white porcelain cup upside down, and then turn them upside down, gently lift the slender small cup, let the tea soup stay in the small white porcelain cup, send the slender small cup to the bottom of the nostrils and suck hard, saying that this is smelling the fragrance of tea, the slender small cup, also known as the smelling cup. A senior friend said: "Smelling the fragrance first, then tasting the tea, is a process of the tea ceremony." ”
In fact, if you smell like that, you can't smell any special fragrance, and it's not very elegant, and it's a bit pretentious. The aroma of this tea can actually be smelled in the process of making tea, and the small white porcelain cup can also be smelled when drinking tea. In some tea estates or tea shops, I see some little girls performing the "tea ceremony" there, but they also focus on the performance, and they can't see that the "Tao" is there. I'm still ignorant of the tea ceremony.
Since ancient times, drinking tea is a very common thing in daily life, firewood, rice, oil, salt, sauce and vinegar tea, tea ranks last, probably the monks in the temple put Zen into the tea, and slowly there is a tea ceremony. This is, of course, just my personal conjecture. I've never seen an authentic Chinese tea ceremony, but I've seen a Japanese tea ceremony on TV, and there's a lot of attention to detail in the whole process, and they seem to enjoy it. Tenshin Okakura, a Japanese, wrote a book called "The Book of Tea" in English, composing a far-reaching song to the Western world about the "Mountains and Flowing Water" with the theme of "Tea Ceremony". It is said that the Japanese tea ceremony was passed from China, so the Chinese tea ceremony should be more elaborate than the Japanese tea ceremony. The "Book of Tea" by the Chinese Lu Yu is also many centuries earlier than the "Book of Tea" by the Japanese Okakura Tenshin. China's Lu Yu is the real tea saint.
However, not everyone will pay attention to the tea ceremony, and for the general public, drinking tea to quench their thirst is their "way". However, there are exceptions - some people who are not big or small, especially those who have a little power in their hands, are very keen on this and that, in addition to the "tea ceremony", there are also "flues" and "wine roads", some people smoke, a pack of "Great China" every day, some people drink, non-"Moutai" and "Wuliangye" do not drink, and they don't know their "Tao" Tao, I heard that some people smoke a lot of fake cigarettes, drink a lot of fake wine, and even don't know themselves, as long as that famous brand, let alone its "Tao". — Pull away, or go back to drinking tea. Some people buy some expensive purple clay pots, find some brand-name mineral water, and buy some very expensive tea leaves to brew there, which is also called the tea ceremony. This is understandable, as long as you have money and are willing to spend money, you can do whatever you like. But thousands or even tens of thousands of purple clay pots, hundreds of thousands or even thousands of pounds of tea, go to other provinces to pull "high-quality" mineral water, I can't think of anyone who is so generous and willing to spend their hard-earned money like that. I have been drinking tea for decades, although I don't know what the "tea ceremony" is, for drinking tea, there is still a little personal experience, this experience, that is, as long as you have your own taste, brew out and feel good, is the biggest "Tao".
There was a time when "Chinese Studies" was very hot (and still a little hot), and there were good people who explained the Tao of "Lao Tzu" on different occasions to help others improve their cultural quality. I have a low level of education and can't hear the sermon. Professor Li Ling has a book dedicated to "Lao Tzu", with the title of "People Go Low". I like this title, and I also have my own understanding of "Tao", the Tao has avenues and paths, no matter what the Tao, as long as it is the right way, just go on. Man is to walk in the right way.
