Drying method: Hang the fresh jujube in a cool, dry and ventilated place, and turn it once every 1 3 days, so that the jujube gradually loses moisture and becomes a dry jujube. This method takes a longer time, but it preserves the fresh taste of the dates.
Drying method: choose a dry, flat and ventilated place to set up a drying field, spread the jujube into a high and low tile ridge shape, evenly spread on the drying field for exposure, with a thickness of 6 to 10cm, and 30 to 50kg per square meter of pavement. Baking method: Generally, a special baking room with coal and other raw materials should be built. The fresh jujubes are graded according to their size and maturity, and the rotten jujubes are picked out and put on the shelves respectively, with a thickness of 2 layers. Once plated and on the shelves, close the door and exhaust pipe and start baking. The whole baking process is divided into three stages: heating, evaporation and drying. During the heating phase, the temperature of the oven should rise slowly and steadily to 55;In the evaporation phase, the temperature is raised from 55 to 65 to 68, but should not exceed 70;In the drying stage, the temperature in the oven is lowered to 55 for 4 to 6 hours. Drain the tide 1 to 2 times throughout the stage. In the later stage, pay attention to the selection of jujube plates that meet the drying requirements and leave the room at any time.
