When brewery equipment produces beer, the process of preparing wort usually consists of the following steps:
Crushing: The malt is crushed into powder by a pulverizer to facilitate the subsequent saccharification process.
Saccharification: The malt powder is added to the mash pot, an appropriate amount of water is added, and then the saccharification reaction is carried out at a certain temperature and time. This process mainly uses the hydrolase or additional enzyme preparation contained in the malt itself to decompose the insoluble substances (such as starch, protein, hemicellulose, etc.) in the malt and auxiliary raw materials into soluble low-molecular substances (such as sugars, dextrin, amino acids, etc.).
Filtration: The mashed wort is filtered through the lauter tank to separate the spent wort from the clear wort.
Boiling: The filtered wort is poured into the boiling pot, an appropriate amount of hops is added, and boiled for a certain time to further passivate the enzymes, sterilize, extract, precipitate, etc.
Cooling: The boiled wort is cooled to a fermentation temperature by means of a cooling device, usually around 20.
Fermentation: The cooled wort is poured into the fermentation tank and an appropriate amount of yeast is added for fermentation. This process mainly converts the sugars in the wort into alcohol and carbon dioxide, while creating foam and gradually developing the mouthfeel and flavor of the beer.
Maturation: After a certain period of fermentation, the beer will enter the maturation stage, which is mainly to gradually stabilize the beer and form the final taste and flavor.
Filtration: The matured beer is filtered to remove residues and sediments to obtain clear beer.
Packaging: The filtered beer is filled and packaged to obtain the finished beer.
