In this comparative test, 59 ready-made and ready-to-sell coffees from 20 coffee sales units in Fuzhou were sampled (including 30 offline and 29 online), and the samples involved 20 mainstream brands in the market, such as Luckin, Starbucks, Lucky Coffee, Cotti Coffee, etc., including different categories such as American coffee, latte and flavored latte, basically covering the freshly made and sold coffee products on the market.
The comparative test tested 8 items of energy, carbohydrates, proteins, fats, trans fatty acids, total sugars, caffeine, and acrylamide. Judging from the test results:
1.None of the 59 samples were found to contain trans fatty acids (less than 0.).0013g 100g detection limit).
2.In the detection of protein, fat and other items, the detection amount of most products is relatively stable, which basically meets the requirements of the national healthy diet recommendation, and the milk and dairy products added to coffee are of good quality.
3.In the test items such as energy, sugar, caffeine, acrylamide, etc., the test results of each product are quite different, which is worthy of research and consumer attention.
Among the 59 samples, the energy test results were high and low, and the energy of a cup of coffee was higher than 1 6 of the energy required by an adult woman in a dayTwo Americano and two lattes were labeled as "sugar-free", but after testing, two of the latte samples were found to contain more than the maximum sugar limit for "sugar-free".The caffeine test showed that the caffeine content of 4 samples was less than 200mg kg, which was slightly inferior in terms of refreshing effect.
It is worth noting that all 59 samples were detected with low levels of acrylamide, a class 2A carcinogen (at present, there are no restrictions or prohibitions on acrylamide in coffee).

When buying coffee, consumers should pay attention to check whether there is any sugar, caffeine and other tips on the menu or takeaway platform options, pay attention to the energy and sugar content of coffee with added milk, flavored syrup and other raw materials, and choose the right coffee products according to their personal taste preferences and physical condition.
Don't drink too much coffee for a long time, be mindful of when you drink it, and avoid drinking coffee at night before going to bed, on an empty stomach in the morning, and after drinking.
It is recommended that all freshly made and sold coffee merchants should strictly control the quality of raw materials such as coffee bean flour, milk, syrup, etc., and warn or make clear labels on the product sales catalog for products with higher sugar content such as vanilla latte, caffeine content and unsuitable groups, etc., for consumers' choice and reference.
How is acrylamide produced?
Acrylamide is mainly produced during the processing of certain foods at high temperatures.

Can you still drink coffee with confidence?
Among the four categories of carcinogens published by the World Health Organization, acrylamide belongs to group 2a carcinogens, that is, there is limited evidence of carcinogenic effects on humans. Many epidemiological studies have shown that acrylamide is associated with kidney cancer, endometrial cancer, and head and neck tumors, but these carcinogenicities are only "suspected".
