Ganguo is a popular Sichuan dish that has a spicy and delicious taste and is easy to make. However, the traditional dry-pan method requires the use of a lot of oil and salt, which is not suitable for a healthy diet. Below, I will introduce a home-cooked practice of making a dry pot at home, and at the same time, it should be less oil and less salt, which is healthier.

First of all, we need to prepare some ingredients. The ingredients of the dry pot can be adjusted according to personal tastes and preferences, and generally include vegetables such as corn, cauliflower, fungus, bean skin, and bean sprouts, as well as meats such as chicken wings, shrimp, and sliced meat. In addition, some spices such as chili peppers and peppercorns are also needed.

First, clean the ingredients and cut them into appropriately sized pieces. For meat, it needs to be marinated for a period of time with seasonings such as cooking wine and light soy sauce to absorb the flavor.

Next, prepare the base for the dry pan. In a pot, add an appropriate amount of oil, heat it and add peppercorns, ginger slices, garlic cloves and other seasonings, and stir-fry until fragrant. Then add an appropriate amount of bean paste and hot pot base, and continue to stir-fry until the seasoning melts. Finally, add an appropriate amount of water, bring to a boil, remove the seasoning residue, and leave the soup for later use.

Cook vegetables and meat separately. While cooking vegetables, we can add the right amount of oil to the water to increase the taste and color of the vegetables. For meat, we need to put the marinated meat slices into the pot and cook them, then remove them and set aside.

The final step is to sauté the dry pan. In another pot, add an appropriate amount of salt and oil, heat it and add chili, pepper and other spices to stir-fry until fragrant. Then add the cooked vegetables and meat and continue stir-frying. Finally, add a little oyster sauce and a little salt to taste (a little is fine, because the meat and vegetables already have a salty taste, and if you like light, you can also leave it out), stir-fry evenly.

The above is the home practice of making a dry pot at home, by blanching the ingredients first, not only can reduce the amount of oil and salt used, but also can increase the intake of vegetables, which is conducive to a healthy diet. If you like spicy foods, you can increase the amount of chili peppers according to your personal taste.
