Pumpkin soup is a nutritious, delicate home-cooked dish that is easy to make and suitable for people of all ages. Here's a simple recipe for pumpkin soup:

Materials Required:1Pumpkin: 500 grams.

3.Carrot: 1 stalk.

4.Celery: 2 sprigs.

5.Garlic: 2 cloves.

6.Olive oil: to taste.

7.Salt: to taste.

8.Ground black pepper: to taste.

9.Water or vegetable stock: to taste.

10.Cream or milk (optional): to taste.

Steps:1Peel and seed the pumpkin and cut it into small piecesOnions, carrots, and celery are diced separately;Finely chop the garlic and set aside.

2.Bring a pot of hot water to a boil, blanch the pumpkin pieces in the hot water, about 2-3 minutes, remove and set aside. This step removes the raw and astringent taste of the pumpkin.

3.Add an appropriate amount of olive oil to the pan and heat until the oil temperature is slightly high, then add the diced onion, diced carrots, diced celery and minced garlic and stir-fry until the vegetables are tender.

4.Add the blanched pumpkin pieces to the pan and continue to stir-fry evenly.

5.Pour in enough water or vegetable stock over the pumpkin and vegetables. Bring to a boil over high heat and simmer slowly for about 20-30 minutes, until the pumpkin is cooked through.

6.Use a blender to blend the stewed pumpkin soup into a fine paste, or if you don't have a blender, you can just use a spoon to crush the pumpkin.

7.Finally, add salt and black pepper to taste, and add cream or milk to enhance the texture according to personal taste. Stir well and bring to a boil again to remove from the pan.
