There are several home-cooked practices for shrimp:
1.Boiled shrimp:
Prepare 500 grams of fresh shrimp and remove the whiskers, guns and threads.
Put an appropriate amount of water in the pot, add ginger slices and green onions, boil until the water boils, add the shrimp, and blanch for 2-3 minutes.
Remove the blanched shrimp and soak them in ice water for a while, then remove and drain.

2.Spicy shrimp:
Prepare 500 grams of fresh shrimp, remove the shell and line the shrimp, and cut into small pieces.
Heat an appropriate amount of oil in a pot, add Sichuan pepper, dried chili pepper and ginger slices and stir-fry until fragrant, then add shrimp and stir-fry evenly.
Add salt, sugar, cooking wine and light soy sauce and continue stir-frying until the shrimp are browned.
Finally, add an appropriate amount of chopped green onion and coriander, stir-fry evenly and remove from the pan.
3.Braised prawns:
Prepare 6 fresh shrimp, remove the shell and shrimp line, and cut into small pieces.
Heat an appropriate amount of oil in a pan, add ginger slices and garlic cloves and stir-fry until fragrant, then add shrimp pieces and stir-fry evenly.
Add an appropriate amount of cooking wine, light soy sauce, dark soy sauce and sugar, and continue to stir-fry until the shrimp pieces change color.
Add an appropriate amount of water and boil until the juice is thick, then remove from the pan.
4.Salt and pepper shrimp:
Prepare 500 grams of fresh shrimp, remove the shell and line, marinate in cooking wine, salt and white pepper for 15 minutes.
Add flour and starch to a bowl, add salt and pepper and eggs, and stir into a batter.
Heat an appropriate amount of oil in a pan, evenly coat the shrimp in batter, put them in the oil pan and fry them until golden brown, remove and drain the oil.
Place the fried shrimp on blotting paper to absorb the excess oil and enjoy.
