Another way to make pork belly

Pork belly refers to pork with a fat and lean twist, which is commonly found in Chinese cooking. Here I offer a classic pork belly dish – braised pork belly.

Material:

500 grams of pork belly.

Ginger a small piece.

1 green onion - 2 star anise.

Cinnamon bark 1 small piece.

1 tablespoon dark soy sauce.

Light soy sauce 2 tablespoons.

2 tablespoons cooking wine.

3 tablespoons of sugar (preferably rock sugar).

Salt to taste - Water to taste.

Steps & Processes:

1.*Prepare the pork belly**: Wash the pork belly and cut it into pieces about 2 cm square.

2.*Blanch**: Add enough water to the pot, put in the pork belly pieces, bring to a boil over high heat, skim off the foam, cook for about 3-5 minutes, then remove the pork belly, rinse with cold water to remove blood and impurities.

3.*Sauté Sugar**: Add 3 tablespoons of sugar to a pan and slowly heat over low heat until the sugar melts and begins to turn a dark brown brown color (be careful not to burn).

4.*Stir-fried pork belly**: Put the blanched pork belly pieces into the sugar color, stir-fry over medium heat, so that the pork belly pieces are evenly coated with sugar color.

5.*Seasoning**: Add ginger slices, green onions, star anise, cinnamon, and continue to stir-fry until fragrant. Then add light soy sauce, dark soy sauce and cooking wine, stir-fry evenly.

6.*Stew**: Add enough water (the amount of water should not exceed the pork belly), turn to low heat and simmer slowly after boiling, during which the pork belly can be turned appropriately to prevent the bottom from sticking.

7.*Collect the juice**: When the pork belly is stewed until soft and the soup is thick, add an appropriate amount of salt to taste and turn on high heat to reduce the juice until the soup is viscous and the surface of the pork belly is bright.

8.*Out of the pot**: Turn off the heat, put the pork belly on a plate, and sprinkle with chopped green onions or coriander to garnish.

This is a basic braised pork belly recipe, which may vary from region to region, for example, some people prefer to add tofu or other vegetables to the stew. In addition, pork belly can also be used to make a variety of dishes such as braised pork and button meat.
