Noodles, stewed noodles and other machine noodles must be tired of eating, right? Today I will share with you a simple and delicious handmade noodle that is easy to learn and delicious, and the steps are placed below.
Step 1: Find an empty basin and put a large spoonful of bean flour and an appropriate amount of wheat flour, mix the two flours evenly, and then add salt and water to it, the amount of water is not easy to master, it is best to add a small amount of it many times, stir it into a flocculent, and then knead it into a dough. The dough is not smooth when kneaded at one time, and it is good to knead evenly. Put the dough in a basin, cover and simmer for 20 minutes.
Note: Bean flour has no gluten, don't put too much, the ratio of the two flours is at most 1:1, don't add too much water, the noodles should be a little harder, so that the taste is better.
Step 2: Add an appropriate amount of water to the pot, boil the dried vegetables and cook for 2 minutes, remove them and cut them with a knife a few times, and put them in an empty bowl for later use.
In our case, dried vegetables are dried radish seedlings and sesame leaves.
Step 3: The noodles will become softer when they are ready, and the noodles will be smoother by kneading them repeatedly with your hands. Sprinkle some dry flour on the board, put the finished dough on it, sprinkle some dry flour on the surface of the dough, and roll it out into a cake with a rolling pin. After the dry flour is rolled into the dough, spread out the dough, sprinkle a layer of flour on the surface, roll the rolling pin into the dough and continue to roll, and so on until it is rolled into a thin dough sheet, then fold the dough sheet and cut it into long strips of uniform thickness with a knife.
Step 4: Add a little cooking oil to the pot, add chopped green onions, dried chili peppers and dried vegetables and stir-fry a few times after the oil is hot, add an appropriate amount of water, boil the noodles and dried vegetables into the pot and cook for about 5 minutes (our hometown usually says to boil three rollers), then add an appropriate amount of salt, monosodium glutamate and a little cooking oil, stir evenly and then get out of the pot.
