Compared to the simple version, this recipe has an extra addition of minced meat for a richer flavor!

The eggs are steamed to form a very soft, silky tender tofu-like shape that melts in your mouth.

Minced pork is sautéed until crispy and then simmered in a simple, slightly sweet salty sauce, and the contrast between texture and flavor really makes the simple ingredients shine!

3 large eggs.

1 8 teaspoons of salt.

1 cup (240ml) of warm water

Peanut oil (or vegetable oil) 1 2 tablespoons.

Minced pork (or chicken) 120 grams.

1 green onion. Oyster sauce 1 tablespoon.

Light soy sauce or dark soy sauce 1 teaspoon.

1 4 teaspoons of sugar.

1 2 teaspoons of cornstarch.

2 tablespoons of water.

01.In a small bowl, whisk together the oyster sauce, soy sauce and sugar.

02.In another bowl, mix the cornstarch with the water and set aside.

03.In a large bowl of the steamer, add the eggs and salt, pour in warm water, beat in the same direction until a delicate egg mixture, and skim off the foam from the top with a colander. In this way, the steamed egg custard will be very smooth.

04.Bring a steamer to a boil, put in an egg custard bowl, steam for 10-12 minutes, check that if it is not completely set, cook for another 2-3 minutes until it is completely set.

05.When steaming the eggs, heat the oil in a frying pan until the oil is hot, add the minced green onions, stir-fry until the fragrance is released, then add the minced pork, stir-fry until the surface changes color, about 2-3 minutes.

06.Pour in the pre-mixed sauce and stir-fry until well combined.

07.Stir the thickened cornstarch slurry again to prevent sedimentation, then pour into a frying pan and stir-fry until thickened.
