Health professionals pointed out that the research results are conducive to the development of health products such as ** products. In the process of transforming scientific research results, the role of enterprises is also crucial. The results of this study by the meat science and nutrition engineering innovation team of the Chinese Academy of Agricultural Sciences show that plant polysaccharides can improve the strength, water holding capacity, storage modulus and loss modulus of myofibrillar protein gel, and reduce protein digestibility. The addition of plant polysaccharides can make the three-dimensional gel network structure of the mixed gel more compact and fine, and the pores scattered throughout the gel matrix become more homogeneous. The release of the results of this study can provide theoretical basis and technical support for the development of nutritious and healthy meat products in China.
