It is the authentic predecessor of the national liquor Moutai, and is known as "the world's sauce fragrance is out of righteousness". Hua Lianhui, the founder of Chengyi Burning Workshop, rebuilt the winery in 1862 (the first year of Tongzhi in the Qing Dynasty), which took five years to complete, and was initially called "Chengyi Restaurant", and later renamed "Chengyi Burning Workshop".

Chengyi Burning Workshop uses Zheng's ancient Daqu sauce fragrance 12987 brewing process, which is one of the more complex brewing processes in the world. According to this process, it is produced once a year, fed twice, steamed nine times, fermented eight times, and taken seven times. The essence of this craft has been enshrined in the national intangible cultural heritage.

In 1915, China participated in the first World Exposition and won the gold medal. Chengyi Burning Workshop participated in the exhibition under the name of "Guizhou Public Office Liquor" and won the gold medal for its unique brewing process. After Hua Zhihong took over, he used the influence of his business and wealth to update the packaging of Huisha wine, and promoted the wine through his well-known bookstore, Wentong Bookstore, as a sales channel. Due to the extensive influence of Wentong Book Company in the political and cultural fields, Chengyi Burnt Fang Liquor quickly became popular across the country, and Moutai Town has also changed from the original "business town" and "characteristic folk customs" to a "wine town".

In 1935, the Long March of the Chinese Workers' and Peasants' Red Army passed through Maotai Town, and the third crossing of the Chishui River also took place here. At that time, the Red Army was short of materials, and in order to solve the difficulties, Chengyi Burning Workshop took out a collection of fine wine to help the Red Army relieve fatigue and pain. This act of kindness also makes people remember the name of Chengyi Burnt Shop even more.
