The classic practice of dustpan cooking

Dustpan cooking is a traditional snack in western Guangdong Province, especially in Maoming, Dianbai, Gaozhou, Huazhou, Zhanjiang and other places. It is held in a dustpan made of bamboo strips, hence its name. In the process of making dustpan cooking, a stone mill is usually used to grind the rice milk, making the rice flour more delicate and tender. The following is a basic method of dustpan cooking:

Ingredients: Rice (to be prepared as needed).

Cornstarch (to taste, to increase the stickiness of rice flour).

Water (to taste, for grinding rice milk).

Cooked sesame seeds (to taste, for garnish).

Peanut oil (to taste, for lubrication and flavoring).

Soy sauce, chili paste, garlic (for seasoning).

Meat (e.g. pork, beef, or chicken, shredded or sliced, optional).

Vegetables (e.g. bean sprouts, greens, carrots, etc., shredded or sliced, optional).

Steps:1Soak the rice for about 3 hours in advance, then drain the water.

2.The soaked rice is placed in a stone mill and ground into rice milk while adding water.

3.The ground rice milk is filtered to remove particles to obtain a fine rice flour slurry.

4.According to personal taste, you can add an appropriate amount of cornstarch, salt and peanut oil to the rice flour slurry and stir well.

5.Prepare the steamer, place the dustpan in the steamer and bring the water to a boil over high heat.

6.Pour the rice flour batter evenly into the dustpan, being careful not to pour too thickly to avoid uneven steaming.

7.Steam on high heat for about 3-5 minutes until the rice flour batter is solidified and cooked through.

8.Sprinkle cooked sesame seeds on top of the steamed rice noodles to add flavor.

9.If you like, you can sauté meat and vegetables and put them as toppings on rice noodles.

10.Finally, according to personal taste, you can add an appropriate amount of soy sauce, chili sauce and minced garlic, stir well and serve.

Tips: The specific steaming time and heat of the dustpan may vary depending on the thickness of the steamer and rice noodles, please adjust it according to the actual situation.

During the steaming process, pay attention to maintaining the heat to avoid undercooking the rice noodles.
