Two-stage cooling:
The two-stage plate heat exchanger is divided into two sections for heat exchange, the cold water is used for cooling in the front section, the cooling water temperature is below 20, the wort temperature flowing out of the whirlpool sedimentation tank is 90 95, and the wort temperature after cooling is reduced to 40 50. The refrigerant (such as ethylene glycol or alcohol solution) is used in the later cooling, and the refrigerant temperature in the later cooling is -3 -4, and the temperature of the cooled wort is required to be reduced to the fermentation temperature, such as the fermentation temperature of lager beer is 6-10, and the fermentation temperature of ale is 16-18.
A section of cooling:
The first stage of cooling is to cool the brewing water to 3 4 by ammonia direct cooling, and then carry out a one-time heat exchange with the hot wort in the plate heat exchanger, while the wort is cooled to the fermentation temperature, the ice water is heated to about 75 80, and this water can be directly used as washing water.
The difference between the two:
The second of the two stages of cooling is the refrigerant, which exchanges heat with the hot wort at a temperature above the local water temperature;The first stage of cooling is to freeze the local brewing water.
The main advantages of one-stage cooling are:
a.The first stage of cooling uses brewed water as a refrigerant, without the use of alcohol or ethylene glycol.
Compared with two-stage cooling, the temperature of hot water is much higher, and the thermal energy utilization rate of the saccharification chamber is greatly improved.
c.During the two-stage cooling operation, water and refrigerant should be used at the same time, and the temperature change during the cooling process is large and it is not easy to stabilizeIn the first stage of cooling, only ice water is used as the refrigerant in the cooling process, and the parameters of the cold and hot medium remain unchanged, and the operation is stable and easy to control.

First-stage coolingBecause the logarithmic average temperature difference between the cold and hot medium during heat exchange is smaller than that of the two-stage cooling, the heat exchange area needs to be increased by 45% compared with the two-stage cooling. However, since there is no peak load for one section of cooling, the load of the freezer is relatively light and the installed capacity is small.
