2. There are the following differences between Jin Junmei and Zhengshan Xiaozhong black tea in terms of production process:

1) The withering time is shorter than that of Zhengshan small species, and the tea green and the original bright green turn to dark green is considered to be mature.

2) The fermentation time is shorter than that of Zhengshan species, and it will not produce the unique honey fragrance of Junmei, just like the usual Zhengshan species.

3) Drying is the most critical, the traditional Zhengshan species should be smoked with pine branches, and Junmei has not gone through the process of smoking with pine branches except for a small part of the smoke in the withering process.
