Steps: Wash the trotters and cut them into cubes. Slice the ginger and chop the green onion into sections.
Production process:1Add water to the pot, put in the pig's trotters, ginger slices, green onions and cooking wine, skim off the foam after boiling over high heat, turn to low heat and cook for 10 minutes, remove and set aside. 2.Add a little oil to the pan, add rock sugar, and stir-fry over low heat until melted and caramel color appears. 3.Add the pig's trotters and stir-fry evenly so that the pig's trotters are coated with sugar. 4.Add light soy sauce, dark soy sauce, Sichuan pepper, dried chili, star anise, bay leaves, cinnamon, and stir-fry evenly. 5.Pour in hot water, just over the trotters. After boiling on high heat, turn to low heat, cover the pot and simmer for 1 hour until the pig's trotters are soft and glutinous. 6.Season with salt and white pepper to taste and stir-fry well. 7.Finally, turn on the high heat to reduce the juice and make the soup rich and red. 8.Remove from the pan and serve, sprinkle with chopped green onions.
Tips & Suggestions: To make the pig's trotters more soft and glutinous, you can use chopsticks to prick some small holes in the pig's skin during the stewing process. At the same time, keep stir-frying when collecting the juice so as not to paste the bottom of the 2024 Book of Answers
