1. Toon mixed with tofu
Production process:
1.Take a piece of tender tofu and cut it into small pieces about 1 cm on each side; Blanch the young toon buds in boiling water for 20 seconds to remove nitrites, then remove and gently squeeze off excess water, and then chop them into minced toons; Also, chop the two millet peppers for later use.
2.Boil water in a pot until the water is completely boiling, gently add the tofu and continue to cook for about 30 seconds to remove its characteristic beany smell. Subsequently, quickly remove the tofu and dip it in cool water to prevent it from sticking. After rinsing with cool water, drain the water lightly and arrange the tofu neatly on a plate.

2. Toon egg custard
Production process:
1.Wash the toon thoroughly. Next, blanch the toon in slightly boiling water for between 40 seconds and 1 minute. When you're done, remove the toon and gently squeeze out any excess water, then finely chop it and set aside.
2.Crack 3 eggs into a bowl, add 2g of salt and 200ml of water, stir well until the egg mixture is completely broken.
3.Add an appropriate amount of chopped toon to each bowl and pour in the previously prepared egg mixture. To ensure a tightness during steaming, the bowl can be covered with plastic wrap and a few small holes in the plastic wrap with a toothpick to allow for ventilation. Alternatively, you can also use a small plate to cover the bowl. Next, place the bowl in a pot with cold water and steam in an electric steamer for 20 minutes.
4.When steaming is complete, remove the toon custard. You can add a few drops of sesame oil to taste according to your personal taste. At this point, a fragrant toon egg custard is complete, enjoy!
3. Toon pills
Production process:1After washing the toon, blanch it in boiling water for 30 seconds, remove it and squeeze off the excess water and chop it into pieces.
2.Crush the old tofu and mix it with the chopped toon, then add chopped green onion, minced ginger, diced carrots, salt, monosodium glutamate, chicken powder, a small amount of sugar, oyster sauce and thirteen spices to taste. Then, crack two eggs into a bowl and slowly add the appropriate amount of flour, stirring constantly until it reaches a uniform and viscous state. Set the batter aside for later use.
3.When the oil temperature reaches 50% hot, squeeze the filling out of the tiger's mouth into a ball-like shape, gently put it into the pot with a small spoon, and then turn to low heat and fry it slowly to ensure that the meatballs are evenly heated to avoid uneven raw and cooked inside and outside the meatballs.
