A guide to the Spring Festival hits
Braised hooves, a traditional dish that symbolizes reunion and abundance. Add something to make the meat more soft and rotten and deboned, and it melts in the mouth, which is soft and glutinous and flavorful, and does not show greasy at all. Full of collagen, it is not only delicious, but also a good choice for nourishing health.

3) Production steps:
1. Pretreatment hooves: Pour half a pot of water into the pot, put in the hooves, skim off the foam after boiling over high heat, add 1 tablespoon of cooking wine and continue to cook for about 5 minutes.
2. Clean the hooves: take out the hooves, rinse them well, pluck the remaining hair with plucking pliers, and wash them again.
3. Prepare the seasoning: knot the chives, slice the ginger, and prepare it with cinnamon, star anise, and dried chilies.
4. Rice cooker simmering: Put the hooves into the rice cooker, add water to cover the ingredients, and then add all the seasonings. Reduce to soup mode and simmer for 2 hours.
5. Check the degree of ripeness: After two hours, insert chopsticks into the hoof to check the degree of ripeness. It usually needs to be simmered for about three hours.
6. Collect the juice: Remove the hooves and put them in the pot, pour in the soup in the rice cooker, and filter out the spices and impurities. Collect the soup on high heat.
Plating: Finally, pour the thickened soup over the hooves to add flavor. Finally, when the hooves collect the juice, add an appropriate amount of eggs or pigeon eggs (boiled in advance to remove the eggshell), which is called ingots in our Jiangnan. It means reunion.
Don't waste the hooves that can't be eaten, you can also remove the bones and process them like this, which is convenient to eat, and the more you burn, the more flavorful it is.
Tips:Choose fresh, fleshy hooves to ensure a delicious taste. When simmering, the amount of seasoning can be adjusted according to personal taste.
