One dish that stood out to me during my long culinary quest was the brisket with tomato. The sweetness and sourness of this dish are rich, the meat is tender, and every bite is delicious, as if with the warmth of the sun, which makes people happy.
It was by chance that I went to a friend's house, and he prepared a stewed beef brisket with tomato for me. I was so amazed by the deliciousness of the dish that I asked him how to make it. After many practices, I finally grasped the essence of this dish, and I will share it with you now.
First of all, the ingredients we need are: beef brisket (500g), tomato (2), onion (1), carrot (1), light soy sauce (to taste), dark soy sauce (to taste), cooking wine (to taste), star anise (to taste), cinnamon (to taste), bay leaf (to taste), salt (to taste).
Cut the brisket into pieces, blanch in boiling water to remove blood foam, remove and wash for later use.
Diced tomatoes, shredded onions and carrots.
Put an appropriate amount of oil in the pan, add **stir-fry until the sugar is brown and fried to caramel color.
Add the brisket and stir-fry until browned.
Add shredded onion, shredded carrots, star anise, cinnamon, and bay leaves and continue to stir-fry.
Add light soy sauce, dark soy sauce and cooking wine, and pour enough hot water (no brisket).
Bring to a boil over high heat, reduce heat to low and simmer for 1 hour.
Add the tomato cubes and continue to simmer for 30 minutes.
Add salt and simmer until the soup is thick.
Food Tips:
When choosing a brisket, you can choose one with some fatty meat, which will be more tender when stewed.
Choose tomatoes that are ripe through, which will be more likely to rot when stewed and have a better taste.
Pay attention to the heat when frying the sugar color to avoid stir-frying.
Keep the heat low during the simmering process to make the brisket more flavorful.
After adding the tomatoes, you can adjust the heat appropriately to prevent the tomatoes from rotting.
Finally, add an appropriate amount of salt and adjust to personal taste.
