The first course: osmanthus glutinous rice lotus root.
First, peel and wash the lotus root. Then, soak the glutinous rice in clean water for an hour, after which the glutinous rice is filled with lotus root little by little. Prepare a large pot, put glutinous rice root, brown sugar and an appropriate amount of water into the pot, cook over medium-high heat for two hours, and then remove it. Finally, cut the lotus root into even pieces, sprinkle with a little osmanthus and serve. If you don't like the taste of osmanthus, you can leave it out.
The second course: cold crispy lotus root.
In the first step, peel the lotus root, rinse it, and cut it into 02 cm thick sheets. Next, add an appropriate amount of hot water to the pot, boil the water over high heat, blanch the lotus root in the pot for 20 seconds, and then remove it. The second step is to prepare a basin of ice water and soak the blanched lotus root in ice water for 5-6 minutes until it is completely cooled and removed. In the third step, place the minced garlic, chili flakes, millet peppers, thirteen spices, and sesame oil on top of the lotus root, then drizzle a spoonful of hot oil. Next, add salt, chicken essence, light soy sauce, coriander and millet pepper to the lotus root, mix well and serve.
