What exactly is a cup of coffee for?
It's a drink to refresh and continue life.
Or is it panicked and palpitating?
There are many sayings about coffee.
Some people say that drinking too much is not good for the body.
Drinking too much coffee is addictive, just like smoking and drinking!”
Coffee beans are roasted and what is produced by high temperatures can cause cancer!”
Coffee is irritating and will hurt your stomach when you drink it!”
The coffee is black, and if you drink too much, you're afraid that it will turn black!”
And today. Governor Xiong's circle of friends was also swiped by a message.
59 mainstream coffee brands such as "Luckin" and "Starbucks" were found to be carcinogens of class 2A
A few days ago, the Fujian Provincial Consumer Council carried out a comparative test of 59 freshly made and sold coffees from 20 coffee sales units in Fuzhou. Low levels of Class 2A carcinogens were detected, and the samples involved Luckin and Starbucks.
In this 59 samples, a low level of class 2A carcinogen "acrylamide" was detected (at present, there are no restrictions or prohibitions on acrylamide in coffee in China).
The news spreads so fast.
It caused panic among many coffee fans all at once.
Does drinking coffee cause cancer?
Is it really that serious?
Governor Xiong will first dispel a rumor for everyone.
Drinking coffee ≠ cause cancer.
Can coffee cause cancer? It doesn't exist!
Scientists have also taken a detour in the end whether coffee will cause cancer, the earliest people thought that coffee beans will produce carcinogen acrylamide under high temperature roasting, so coffee was included in the ranks of carcinogens, but with the deepening and expansion of research, scientists gradually found that coffee is really wrong.
First of all. Although acrylamide is a carcinogen, the content in coffee is low, and a ** at least needs to drink dozens or hundreds of cups of coffee every day to be able to measure, but which one can drink so much?
Secondly. Acrylamide is present in many foods, such as fritters, french fries, barbecue, etc., and the acrylamide content in a cup of coffee is not necessarily more than these foods, and it is very unreasonable to take out the coffee alone and hang it.
At last. And most importantly, the International Agency for Research on Cancer (IARC) has identified acrylamide as a Group 2A carcinogen, although it has a definite carcinogenic effect in animal tests, but it has not been conclusive in population studies, that is, there is insufficient evidence that it causes cancer.
Instead of worrying that acrylamide will cause cancer, we should pay attention to the temperature of coffee, because drinking hot drinks above 65 may increase the risk of esophageal cancer, so whether it is coffee, tea, water, soup, etc., do not drink too hot, and let it dry before drinking.
A little more popular science.
What is acrylamide?
What foods are prone to acrylamide?
How did it come about?
Does acrylamide really cause cancer?
With these questions.
Governor Xiong, let's take a good look at it.
01. What is acrylamide?
Among the four categories of carcinogens announced by the World Health Organization, acrylamide belongs to category 2a carcinogens, that is, there is limited evidence of carcinogenic effects on humans, and sufficient evidence of carcinogenicity to experimental animals.
A large number of animal tests have shown that acrylamide is carcinogenic and can cause nervous system damage. Many epidemiological studies have shown that acrylamide is associated with kidney cancer, endometrial cancer, and head and neck tumors, but these carcinogenicities are only "suspected".
02. How is acrylamide produced?
Acrylamide is mainly produced during food processing, when the reducing sugars (carbohydrates) in food and the amino acids (mainly asparagine), the hydrolysate of proteins, are heated, and a complex chemical reaction called Maillard occurs, and acrylamide is formed.
03. Which foods are prone to acrylamide?
According to the principle of Maillard reaction, as long as the food contains more carbohydrates (such as sugars, starches) and proteins, the Maillard reaction will occur when processed at high temperature (120 185) and acrylamide will be produced.
Therefore, a large number of foods such as coffee, French fries, fritters, bread, twist, biscuits, potato chips, and various barbecues may contain acrylamide, and the greater the color change after processing, such as yellow, brown, and charred foods, the higher the acrylamide content.
04. The content of acrylamide in different foods.
In 2005, the Joint Expert Committee (JECFA) of the Food and Agriculture Organization of the United Nations and the World Health Organization (WHO) counted 6,752 test data from 24 countries according to food groups to show the content of acrylamide in the table below.
05. What is acrylamide?
According to the results of a 2010 study in the International Journal of Food and Chemical Toxicology (No. 48), the dose of acrylamide when it causes cancer is 26~16μg/kg.day (1 microgram is 1 millionth of a gram), that is, an adult weighing 60 kilograms, if he consumes 156 micrograms of acrylamide per day (156 micrograms = 2.).6 mcg 60) to reach carcinogenic amounts.
According to the average acrylamide content of brewed coffee in the above table of 13 g kg, it is necessary to drink 12kg of coffee per day to drink the carcinogenic dose. Can we really drink 12kg of coffee a day?The answer is obvious.
In the comparison test mentioned at the beginning, the acrylamide content in coffee was converted into cups for calculation, and the acrylamide content of coffee was 339-10.20 g cups, the daily intake of a cup of coffee is within the safe range, as long as it is not consumed excessively for a long time, there is no obvious health risk to the human body.
So. Leaving the dose to say toxicity is a hooligan!!
Rest assured, everyone. Coffee is still drinkable.
But control it properly.
The intake of harmful substances is always right!
in everyday life.
We enjoyed the food at the same time.
Again, the following points should be noted.
1.Eat less fried potatoes such as potato chips, french fries, and shredded potatoes;
2.Eat less fried pasta such as fritters and crispy;
3.Eat less baked goods such as cookies, cookies, crackers, etc.;
4.Eat less barbecue foods.
For this group, it is recommended to drink less or no coffee.
1.It is recommended not to drink coffee if you have strong discomfort after drinking coffee, if you have gastrointestinal diseases, nausea, vomiting, itching and other symptoms after drinking caffeine intolerance.
2.Patients with confirmed osteoporosis (especially women) are advised to drink less or choose a latte with milk.
3.Pregnant women should control the amount of coffee. Coffee is not 100% avoidance during pregnancy, and moderate amounts of caffeinated beverages and foods do not increase the risk of congenital malformations, miscarriage, premature birth, or growth retardation. The American Academy of Nutrition and Dietetics recommends that women who are pregnant or trying to become pregnant consume no more than 200 mg of caffeine per day. But everyone pay attention, don't just focus on coffee, milk tea, cola, tea and other beverages have caffeine, total control!
