Steps
Step 1: Prepare the pork belly, wash the pork belly, put it in the pot and add enough water, slice the ginger, cut the green onions, put them in the pot together, add cooking wine, boil over high heat, turn to low heat, cook until the pork belly is seven or eight mature, remove and set aside.
Step 2: Cut the boiled pork belly into about 05 cm thick slices, set aside.
Step 3: Take a bowl, add an appropriate amount of dark soy sauce, light soy sauce and sugar, stir well, and make a marinade for the bowl of meat.
Step 4: Put the sliced pork belly into the marinade, make sure each slice of meat is evenly coated with the marinade, and marinate for about 20 minutes.
Step 5: Take a steaming bowl, put the marinated pork belly skin down into the bowl, add the soup from which the meat was cooked, then add star anise and bay leaves, and cover the bowl.
Step 6: Add water to the steamer, boil over high heat, put the bowl of meat into the steamer, turn to low heat and steam 15 to 2 hours until the bowl is tender and flavorful.
Step 7: After steaming, take out the bowl of meat, pour the soup from the bowl into another pot and reduce the juice over high heat until thick.
Step 8: Take a plate, put the bowl of meat upside down on the plate, pour the collected soup over it, and sprinkle with chopped green onion or coriander as a garnish.
