Pork ribs with garlic in a pot
Ingredients & Ingredients:
Pork ribs, pot paste, corn starch, corn flour, glutinous rice flour, peeled garlic, ginger slices, millet pepper, lye water, salt, chicken essence, monosodium glutamate, tender meat powder.
Steps:
Chop the pork ribs into a suitable size, add 150 alkaline water, stir well with your hands, add water to soak for two hours, flush for three hours, rinse the blood water and control the water for later use.
Peel the garlic and ginger slices in a food processor, soak in water for about 10 minutes, and squeeze out the water with gauze.

Pan-fried pig's trotters

Steps:
The hair on the surface of the pig's trotters is cleaned, cut in half in a pot under cold water, and blanched with green onion and ginger cooking wine for later use.
In another pot, add a little oil and rock sugar, heat until the jujube is red, and stir-fry the pig's trotters to color.
Add green onions, ginger, Sichuan pepper, star anise, cinnamon, bay leaves, dried chili peppers, cumin, and stir-fry until fragrant.
Add warm water over the pig's trotters, add 3 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of salt, 1 tablespoon of soybean paste and bean paste, bring to a boil and simmer for 1 hour and a half, or pressure cooker for 40 minutes.
Then fry in a pan until golden brown on both sides, sprinkle with sprinklers and mix well.
Mushroom pea grains

Straw mushrooms, peas, red peppers, oil, salt, vegetarian oyster sauce, water starch.
Steps:
Wash the straw mushrooms and cut them, add water to the pot and bring them to a boil, pour in the straw mushrooms, add salt and cooking oil, blanch for about 1 minute, remove and set aside.
Pour a little oil into the pot, add shredded red pepper and stir-fry until fragrant, pour in straw mushrooms and stir-fry, then pour in peas, add salt and fry for 1 minute until flavorful.
Pour in the vegetarian oyster sauce and mix well, add a little water, simmer over low heat, and finally thicken with water starch, stir-fry evenly and serve on a plate.
