1.Pan-fried tofu
Ingredients: northern tofu, green onion, ginger, garlic, salt, light soy sauce, cooking wine, sugar, starch, cooking oil.
Preparation: Cut the tofu into small pieces, soak in salted water for 30 minutes, remove and set aside.
Heat the pan with cold oil, add the tofu cubes, fry until golden brown on both sides, remove and set aside.
Leave the bottom oil in the pot, add the green onion, ginger and garlic and stir-fry until fragrant, add light soy sauce, cooking wine, sugar, salt and an appropriate amount of water to boil, add the fried tofu cubes, stir-fry evenly, and thicken.
2.Mapo tofu
Ingredients: South tofu, minced pork, green onion, ginger, garlic, bean paste, chili powder, Sichuan pepper powder, salt, light soy sauce, cooking wine, sugar, starch, cooking oil.
Preparation: Cut the tofu into small pieces, soak in salted water for 30 minutes, remove and set aside.
Heat the pan with cold oil, add minced pork and stir-fry until it changes color, add green onions, ginger and garlic and stir-fry until fragrant, add bean paste and chili powder and stir-fry the red oil.
Add an appropriate amount of water, add tofu cubes, add light soy sauce, cooking wine, sugar, salt and bring to a boil, turn to low heat and cook until flavorful.
Thicken with water starch and sprinkle with peppercorn powder.
3.Tomato tofu
Ingredients: southern tofu, tomato, green onion, ginger, garlic, salt, light soy sauce, cooking wine, sugar, starch, cooking oil.
Preparation: Cut the tofu into small pieces, soak in salted water for 30 minutes, remove and set aside.
Heat the pan with cold oil, add tomatoes and fry until soft, add an appropriate amount of water, add tofu cubes, add light soy sauce, cooking wine, sugar, salt and bring to a boil, turn to low heat and cook until flavorful.
Thicken with water starch and sprinkle with chopped green onions.
4.Tofu soup
Ingredients: northern tofu, shrimp, egg, green onion, ginger, garlic, salt, light soy sauce, cooking wine, starch, cooking oil.
Preparation: Cut the tofu into small pieces, soak in salted water for 30 minutes, remove and set aside.
Wash the shrimp, add salt, cooking wine and starch and marinate for 10 minutes.
Heat the pan with cold oil, add the shrimp and stir-fry until it changes color, add green onions, ginger and garlic and stir-fry until fragrant.
Add an appropriate amount of water, add tofu cubes, add light soy sauce, cooking wine, sugar, salt and bring to a boil, turn to low heat and cook until flavorful.
Crack in the eggs, stir well and bring to a boil.
5.Minced meat tofu
Ingredients: South tofu, minced pork, green onion, ginger, garlic, bean paste, chili powder, Sichuan pepper powder, salt, light soy sauce, cooking wine, sugar, starch, cooking oil.
